Some of my favorite meals are Mexican. I love the spicy flavors and the way almost everything you make will taste great, as long as you start with the right ingredients. The sides always look so exciting, too. Sometimes nothing hits the spot like guacamole, especially with some crunchy lettuce as it's friend. A lot of Mexican food can be made quickly, too...not all, but a lot of it. That said, I present to you 4 Mexican platters: 3 of these are mine and not authentic at all, but that last one is different.
Tofu Soyrizo Wet BurritoKeep some sauce on hand and you can throw this one together in a pinch. On the side is a Mexican Fried Rice experiment.
Black Bean and "Chicken" QuesadillaFor some reason, I can't quite get my quesadillas as crispy as I'd like them to be. Guess that just means I have to practice more. No guac this time, too bad.
Cheesy "Chicken" Enchilada with Red SauceOur favorite out of these 3. A little more tweaking on that recipe and I'll be posting it. And with tater tots on the side, you know this one has to be a winner.
Potato Chickpea Enchiladas with Green Tomatillo Sauce and SidesThis one is the oddball! It's a platter of Terry testers. The green tomatillo sauce is so good that it's nearly hypnotic. Lots of flavors and lots of authenticity here. These recipes will be in Vegan Latina.

i want some chips 'n salsa, too! mexican yummies are one of my favorites, and in thinking about it - dan & i haven't enjoyed much of them lately. i think we need to fix all that! :) your dishes look awesome, Tami (and the tester)!

Your plating is so fancy! It looks just like what I get at my favorite mexican restaurant. And everything looks delicious. I love Mexican food, especially anything with Soyrizo.

We have a quesadilla maker, which we got as a gift. When we received it I thought it was stupid, but it gets the tortilla nice and crispy.
I just ate the last of the enchiladas I cooked up from Terry's test recipe. They were so, so good! I'm a big fan of Mexican food, too, so I'm really happy to be testing recipes for her.
I made mexican last night! I love tomatillo sauce, I would love to have your recipe. Looks wonderful!
I get my tortillas nice and browned by using the cast iron skillet. All these plates look terrific. I love Mexican food!
There used to be a place called Taco Time in Olympia where I would get tots called Mexi-Fries. Everything looks great!
