Book Contest: Soup's On! (with Very Berry Muffins)

Here's really tasty proof that I meant it when I said that I was going to kick start the blog again. I'm back with a book contest that features some delicious blueberry muffins! Since I can't share the muffins themselves with you, the publisher of Soup's On! has generously given me permission to post the recipe instead.


Soup's On!, by Barb Bloomfield, is nifty little book. The Soup section is broken into five subsections: Tomato Based Soups, Miso Based Soups, Pureed and Creamy Soups, Stews and Thick Soups, and Other Soups. Under Tomato based, I'm itching to try the Mexican Soup Stew, made with quinoa and tvp and also the Seitan Soup with Cabbage. The Miso section has a Kraut Soup! I love fermented foods, especially when they're together, so this one really caught my eye. In the Pureed and Creamy section, there's a Triple Onion Soup made with tofu that is intriguing. Generally, I like my soup thick and more stewlike, and that chapter has plenty of offerings, too: Lentil and Barly Soup with Greens and Seitan Pasta Delight, to name just a couple. In Other Soups, I'd love to try the Green and White Soup, made with brussels sprouts, or the Curried Bok Choy and Snow Pea Soup. As you can tell, the book has a lot of variety and uses some ingredients not frequently seen in soups. That's not to say that the traditional soups, like Minestrone, are overlooked, because they're in there, too. Like all soup recipes, a lot of the ingredients are probably already in your pantry, but combined with fresh ingredients, you'd have the makings of a delicious soup.

But back to those muffins. Besides the soup recipes, Barb includes a bunch of muffin recipes, both sweet and savory, and all sound wonderful, as well as an accompaniment chapter with a few more bread recipes that would like to buddy up to whatever soup you choose to make. Being the impatient type (and having fresh blueberries to use), I jumped into a blueberry mufffin recipe that took 2 cups (yes, 2 cups!!!), of blueberries. I've never made a muffin with that much fruit that still managed to maintain that fantastic muffin texture. These did and I was so impressed that I asked if I could post the recipe. The only sub I made was to use extra whole wheat pastry flour for the barley flour, because I didn't have any.

Very Berry Muffins (with thanks to Rick and the Book Publishing Company)
Yield: 12 muffins

Liquid Ingredients:
1 cup nondairy milk
1/2 cup flax seed mixture (2 tbsp ground flax seeds in 1/2 cup warm water)
1/2 cup liquid sweetener (I used agave)
3 tablespoons canola oil

Dry Ingredients:
1 1/2 cups unbleached white flour
1/2 cup barley flour (I subbed ww pastry flour)
1/2 cup whole wheat flour (I used ww pastry flour)
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt

2 cups berries: raspberries, blackberries, strawberries, etc, (fresh or frozen and thawed).

Preheat the oven to 350 degrees F.

In a blender, combine the liquid ingredients. Blend until smooth and creamy, and pour into a mixing bowl.

Sift the dry ingredients into the liquid ingredients and stir until the dry ingredients are absorbed.

Gently stir the berries into the muffin batter. Spoon into lightly oiled muffin tins, and bake for 20 minutes.

Test to see if the muffins are done by inserting a toothpick in the middle of a muffin. If the toothpick comes out clean, the muffins are done.

Although this is a soup book, I think it would be worth buying for the muffin recipes alone. Especially at its low price of $10.95! I'd love to try the rye muffins with capers (especially alongside that Kraut Soup) or the Mashed Potato and Gravy Muffins. Those just sound genius.

My favorite soup is Veganomicon chickpea noodle, OR potato leek...though I have yet to find a knock-your-socks off recipe for that and am a sucker for the instant stuff.

My favorite muffin is banana bread in muffin form!

Oh, but I'm mainly commenting because I know who the author is! You know how I mentioned getting free produce from my farmer friend on your testing forum? Well, his aunt Barb has written quite a few cookbooks and I've paged through them, intending to buy one one of these days...all her recipes look simple and fantastic. Small world, isn't it?

My favourite soup is a Mushroom one I make - the most mushroomy soup ever. Soaked dried Porcini's, portobellos, creminis, button and any other you have - some left whole, some pureed to velvety smoothness as the soup base. Heavan.

Favorite soup would have to be a greens and garlic soup that is in the Greens Glorious Greens cookbook. It'll knock any cold right outta ya! As for muffins, I really like the blueberry spelt muffins in Babycakes :)

My favorite soup (right now!) is the green bean and potato soup from Derva Gartenstein's "Local Bounty". So easy and just delicious.
My favorite muffin is raspberry cornmeal but that changes practically every time I make muffins!

My favorite soup is a vegetarian Pho with rice noodles..love it. My favorite muffin is harder to say..I love a good banana nut, corn is also good and who can say no to a blueberry one either!

My fave soup would have to be the Hot n Sour soup from a vegan asian spot in Winnipeg called Delicious Vegetarian. It is so thick and is more than a meal. I haven't found one that is even close to as good as this soup. A close second would be a spicy black bean and garlic blended soup served with a dollop of guac on it. mmmm

Those muffins look and sound fantastic! My favourite soup is plain old tomato soup. It's great with additional dried toamtoes and lots of garlic, of course.
Can't wait for the new food network fridays!

I love corn muffins! They seem to go so well with most soups and I can't think of anything better to eat with chili. Yummmmmm corn muffins ....

My favorite soup is the curried cauliflower soup (online recipe) served with flaky biscuits.
The soup is sweet, spicy and creamy thick!

My favorite soup (if you call it a soup) is my grandma's chili (minus the meat). That and some corn muffins are the perfect combo, especially for fall!

My favorite muffin would have to be the Coffee Chip muffins from Vegan Brunch. It is so hard to pick favorites. There are so many really yummy recipes out there.

A favorite soup recipe?! Do you know how hard that is for a soup obsessed soup lover like me?! Wow...well, I am with you--I like my soups thick and stew-like, so I guess ONE of my favorites is a thick lentil soup with tons of veggies and tomatoes...yum!

And I am thrilled with the 3 posts in a week fact :-)

My new favorite soup is from the NYT: clear summery borscht. I made it only because I had to use up a boatload of beets. Now I can't stop eating it. Fabulous surprise!

My favorite soup is any kind with lots of veggies and maybe some pasta. I'm a throw-it-all-in-the-pot-and-see-what-happens type of soup maker. I think my favorite kind of muffin might be pumpkin, can't wait for the fall!

My favorite everyday soup is a Dahl concoction that I developed to satisfy my husband's Dahl soup cravings when a favorite Himalayan restaurant near us went under. The recipe is on my Blog. This is the perfect time of year to make it because it really pops with the chopped black prince tomatoes sprinkled on the top and fresh cilantro from the farmers market.

My favourite is a homemade vegetable soup. The best one so far that I've made had butternut squash, swede, onions, mushrooms and celery in. All boiled together in some veg stock and blended. YUM.

my favorite soup is an iranian herb and noodle soup with beans...sort of a cross between a soup and a stew...yum....(its called ashe reshteh if anyone wants to do a recipe search)

This time of year, my favourite recipe is Curried Broccoli. the local organic marekets are full of broccoli and I'm going to make lots to put in the freezer for the winter. I've just found this blog today. Wow, I'm impressed.

I love brothy soups, but my preference tends to be for anything creamy and orange. Any sort of blended carrot, sweet potato, or squash soup is always welcome - so many flavour options, too - peanuty, gingery, spicy.....mmmm......
