Peach and White Chocolate Chip Scone

If it seems like I'm kind of quiet, it's because I'm stockpiling posts. It's that time of year again. VeganMoFo starts in October! This will be third year I'm participating. The best part about it is seeing what all the other bloggers do.

Because VeganMoFo coincides with our annual trip to Vermont, I'm going to do my best to keep up on posting. Reading other blogs isn't quite as easy when we're away. I'm sure I'll be catching up on those until at least April of next year since we have a record number of bloggers onboard, and I'll be savoring every minute of reading their posts.

Since this is kind of a businessy post, I'm including the scone. You know, like donuts at a meeting or something like that. It happens to be a delicious peach and white chocolate chip scone. It's shown on a plate my mom got for me. (Thanks, Mom!) I used Isa's recipe in Vegan Brunch, dropping the lavender and berries but adding the extras. The recipe also happens to be here on Isa's blog. If you don't have the book, get it!

Courtney, my all time favorite from VB has to be the bagels. But we loved all the frittatas and quiches, the Chesapeake Tempeh Cakes, the pierogies {esp. the mushroom/sauerkraut ones}, pretty much everything. But nothing beats the scones for instant gratification!

Courtney, you don't have a blog, do you? Maybe MoFo is the time.....just sayin'.

Thanks for the help, Tami. I was finally able to make the "gadget" on my computer while at work. Now I just need to start writing (and finding a few photos that aren't blurred or washed-out!)!

Hahaha--I am technologically challenged...seriously, I couldn't handle a blog! But I SO appreciate all the work that you and all of the other vegan bloggers do! Thank you for all of your fabulous posts and recipes :-)

I am glad you are taking part in veganmofo! I will have to stockpile posts, too. It is going to be a bit difficult this year.
Vegan Brunch has been such a great book so far, the scones sound like they are really worth trying.

I made the cranberry orange pecan muffins (or something like that)from Vegan Brunch today--they are cooling as I write this...I am going to try scones next! The reason I didn't make them is the non-hydrogenated shortening the recipe calls for...do you have a brand you could recommend? It isn't something I usually keep on hand...

Courtney, I don't think I tried those. Because you know.. nuts. But I really don't think you can go wrong with anything in that book.

I use EB Shortening in sticks. I'm not sure it's available everywhere though.....
