In case you’re new to this blog, let me remind you about Food Network Fridays! The idea is to veganize a recipe from the Food Network. For our next wrap-up, October 16th, we are doing a recipe suggested by Kelvia over at the PPK. To play along, all you have to do is veganize the dish however you wish. It’s wide-open for your creativity and substitutions. Post your dish on your blog, or email me with the info if you’re not a blogger. Be sure to make a comment on the post here on the 16th so we can see what you did. The recipe Kelvia chose is Yucatan Chicken Skewers with Peanut Red-Chile BBQ Sauce and Red Cabbage Slaw, originally from Bobby Flay. Two of us have already made our versions of this and both loved it. If you’ve been on the bubble about joining, this one seems like a sure win.
Now, just so I don’t leave you foodless, check out this potato tomato tart thing. It’s probably one of the uglier things I’ve made…but let me tell you, it tasted so great that looks didn’t matter! Farm market fingerlings, our own heirloom tomatoes and basil…all cooked in a big cast iron skillet. Yum!
This is my 8th VeganMoFo post….almost 1/2 way there! I didn’t forget the restaurant throw down. It’s still to come. If you’re doing MoFo, hope you’re still going strong, too!

Hmm, my favorite raw vegetable… I guess I’d have to go with baby carrots. So sweet and crunchy and colorful!

raw corn for sure! so naturally sweet and wonderful, it’s a wonder why people started to boil, roast, or microwave(gasp!) it!
My very favorite raw veggie is a juicy, red, ripe tomato. Our garden was full of them this summer!
My Favorite raw vegatable is celery, I can eat a whole bunch in a sitting!
Congrats to the winner, I’m envious! My fave veggie is kohlrabi, which is less common in North America but I enjoy it in Germany (sometimes they can be as big as my head!)
Since people wrote that tomatoes are their favorite veggie, I figured that I could use avacado (both technically fruit). I love avacados!

Wow–that is a tough one! I think it is a toss up between mushrooms and spinach? I love tomatoes most of all, but since those are a fruit I am torn between mushrooms and spinach…and celery and cucumbers! Ahhh! Raw veggies are the best!

The tomatoes I grew this year were some of the best I’ve ever eaten. I also dig grated raw beets.

But if I had to choose one…. I would say those crips little sweet peppers! Red ones…yellow ones…and orange! My mouth is watering now…

my favorite raw vegetable is probably spinach, but like others, i do have a soft spot for carrots and bell peppers are pretty good too. decision-making has never been my strong point =)

My FAVORITE raw vegetable is carrots, the ones that look like they just came out of the ground. They are AMAZING and so nourishing!
Cherry tomatoes, for sure. I can eat them like candy, fresh out of the garden!
I think carrots are up there, I’ve turned myself orange before on accident :X and a new one that I picked up by reading blogs is raw corn, sooo sweet and delicious!
