This weekend, we enjoyed the "yeast-raised, make-the-night-before" Summer Waffles from American Vegan Kitchen without the fruit and sauce but with an unhealthy dose of earth balance and the perfect amount of maple syrup. To clarify, that's what I enjoyed. Jim eats his waffles with only earth balance. He thinks I'm a maple syrup fiend because I like it on waffles, pancakes and french toast. Of those three, he only uses it on french toast. So I think that makes him the weird one. I recently made the mistake of mentioning that we also used to have maple syrup with popovers and with fried cornmeal mush for breakfast when I was a kid.
Just recently I started adding it to my coffee. I top my coffee with a little soy milk, too. About a tablespoon of maple syrup sweetens it perfectly. I also find an excuse to add it to anything I'm baking with chocolate or coffee. It gives a delicious undercurrent. It's also really good with baked beans, of course, or in marinades. Oh, and I love drizzling a little on oatmeal.
After being teased a little about my love of maple syrup, I got to wondering. Do you eat maple syrup on pancakes, waffles and french toast? Or are you more discriminating? What else would benefit from maple syrup? I'd hate to miss out on syrupy goodness.

love it! maple syrup goes on Pancakes, waffles, french toast, oatmeal, polenta (cornmeal mush!) and into any cookie recipe it can! Love the stuff!
Maple syrup BELONGS on pancakes, waffles and french toast (especially if there is some faux bacon or sausage in the mix)! I also frequently add it to oatmeal and polenta, and always drizzle it on baked sweet potatoes.
I've never tried it in my coffee, but now I definitely will.
love it. in fact, i was getting worried about consuming too much sugar from maple syrup so i special ordered some natural maple extract to add to my oats for that mapley goodness.
Looks delish! I need a new waffle iron.
There's nothing like pure maple syrup. I made pancakes one morning when my son had a sleep over and the boys all said how good the pancakes were. I have to believe it wasn't just the pancakes but the maple syrup. You know most people use pancake syrup not the real stuff.
Pancakes and waffles but not French toast. On French toast I always have jam. I thought everyone put jam on their French toast! :) Back in Wisconsin I used to buy a case of maple syrup directly from a farmer — Wisconsin syrup is really good.
I love it too! I love to bake with it. I just posted a recipe on my blog for some muffins I made today with maple syrup, and I made these cookies last week - http://www.vegetariantimes.com/recipes/9982?section=
One of the waffles on your plate has a wing. Pretty funky!! I love maple syrup too. My boyfriend's family lives in Ohio and his mom sends us OH syrup every year. Nothing beats free maple syrup! And I agree, it is weird not to put maple syrup on pancakes and waffles!!! Maybe your husband is missing the essential maple syrup gene? Probably. For sure.
I love maple syrup! I occasionally eat it with a spoon :) Maine maple Sunday is coming up, so I'm working on a gluten-free pancake recipe. Last spring I made super-mapley granola, and during Vegan MoFo I made maple candy (if you love maple syrup, you MUST make your own maple candy). Maple syrup is amazing, and I love that it comes from trees. Thank you, maple trees!
I grew up on maple syrup as well. My parents had lived in CT for a while and used to have a barrel shipped to Kansas. I try not to use it in recipes, since it is so expensive. But I have no problem coating pancakes or french toast with it. I'm going to have to try cornmeal mush sometime, to see if that is good as it seems. I'll eat it on oatmeal as well.
i'm a maple syrup fiend as well, and my husband isn't as big of a maple syrup fan. i love it on anything, like pb banana and maple syrup sandwiches, hot cocoa, in some marinades, homemade almond butter, and of course on my oatmeal too.
When my boyfriend bought the first bottle of maple syrup a couple of years ago, I hated it. Now I could drink it straight from the bottle. People don't use it here in Germany, but my grandmother recently bought a bottle and I still owe her some recipes.
I always put a touch of maple syrup in my turmeric and curry stir fries to balance the soy sauce or bragg's. I only wish it cost a little less. I won't use "pancake" syrup, so on my budget, a little bit of maple is a huge treat. It's much too precious to be poured all over a plate of waffles where half of it will remain on the plate.
Love the article about pure maple syrup and I have some suggestions:
1. if you buy maple syrup by the gallon it's the best value. You can split the gallon into smaller containers and freeze what you don't have room for in the fridg--it doesn't actually freeze and keeps the color and grade.
2. go to www.vermontmaple.org for a converstion chart about how to use maple syrup instead of sugar in your favorite recipes.
3. maple syrup has calcium, vitamins and antioxidants!

I put maple syrup on EVERYTHING. Pancakes, crepes, french toast, coffee, on snow (to make taffy), on bread (when it's the creamy maple spread), on a spoon out of a jar (when its like molasses), in oatmeal, on sausages and bacon, in baked beans, on salmon/ham...
Basically everything.
I've only had Ontario and Quebec Maple syrup (since I'm from Ontario and my partner is from Quebec).
I still need to do a real maple sugar shack in Quebec sometime...I'm sure I'd come out in a maple syrup coma..haha
I always put Earth Balance and syrup on pancakes, waffles, and french toast. ALWAYS!
I'll have to try those when your cookbook arrives! I ordered it with a couple other books from amazon, and it should be here any day :)
Maple syrup is expensive, but completely worthwhile. Because of the price, it always feels like such a treat - for me, it's strictly a weekend thing, when I have the time to savor it. I love it on the breakfast foods, but using it to sweeten and flavor salad dressings with fresh greens in the summer is fantastic too :)
I love it too. Grade B rocks! I always try to get out to a sugar shack in Western MA late March-early April when the Grade B comes in. It gives me such a thrill to know that I'm getting it fresh!
My favorite non-pancake/waffle use of the sweet goodness is 1 cup of almond/soy milk with 1 tbsp. peanut butter, 1 tbsp. maple syrup slowly heat on the stove and whisked together to make peanut maple "cocoa" (although there's no chocolate involved!).
Love maple syrup!
I recently made a salad dressing with maple syrup, it was awesome!
You are correct, maple syrup goes on everything! I use it discriminatingly though, since it's so expensive.
I didn't know about this book. Thanks for the information. It should be good to make real (vegan) american food.
Tami:
Our neighbor makes maple syrup by tapping all the trees in the township and then boils it down in their sugarhouse using firewood. Our favorite use is to drizzle it over baked winter squash.
Thanks for lunch today. It was an honor to dine at your table and be in your company.

I adore maple syrup and have a ton of it... I do not know why....lol
Love your blog by the way!!! Really great~!
I love maple syrup too, especially the really dark and sweet grade C stuff I can get around here. I drizzle it on pancakes or waffles, stir it into oatmeal, and occasionally use it to sweeten my chai or black tea. I also love it over soy vanilla ice cream or Alpro vanilla soy pudding, even though that's sweet stuff already. Am I weird?
I much prefer using maple syrup instead of that goop people normally put on their pancakes.
I like maple syrup over vanilla icecream.
Cool. Most of people put maple syrup on pancakes and waffles. Apart I put it into Veg Salad for delicious taste. Nice Post. Fantastic...!
It's great to see so much maple syrup love!
I the same, felt in love with the pure syrup when I was young!
Great on everything even a swig straight from the bottle!
I love maple syrup and peanut butter sandwiches! Maple Syrup, olive oil, and balsamic vinegar salad dressing is delicious with some dill or any other ingredient thrown in. Cream cheese and maple syrup on whole wheat raisin bread is great as well.

Great stuff from you, man. I've read your stuff before and you're just too awesome. I love what you've got here, love what you're saying and the way you say it. You make it entertaining and you still manage to keep it smart. I cant wait to read more from you. This is really a great blog.
Thanks .............
i too love maple syrup! like you, i put it on pancakes, french toast, waffles, in baked goods, coffee. it's a wonderful, wonderful treat!!!!
