Great Grilled BBQ Portobello Burgers


BBQ Portobello Burger with Vegan Blue Cheese

Since that last post asks about your favorite thing to grill, I'll show you one of mine. This time of year, my very favorite is to grill the Incrediburgers (from American Vegan Kitchen) and serve them on a toasted bun spread with garlic scape mayo (best thing ever!) and piled high with baby lettuce, tomato and pickle slices. However, I have yet to get a picture of those since we inhale them too quickly. I tend to make them when I look at the clock at 6 and scramble for dinner. Grab some buns and burgers from the freezer and we can eat in 15 minutes. They're so quick, easy, and satisfying.

But when I think ahead and the portobello mushrooms are irresistible at the store, we have these mushroom burgers modeled after ones we enjoyed at the Singing Bowl in Erie before they closed. We like these best when coated with just enough sauce rather than dripping, but more of a delicious carmelized bbq coating. It's simple and straight-forward so you probably don't need a recipe, but here you go!

BBQ Portobello Burgers a la the Singing Bowl
Serves 2

2 large portobello mushrooms, gills and stems removed
2 tablespoons vegan port or red wine
1 teaspoon vegan worcestershire sauce
black pepper
1/2 cup to 3/4 cup barbecue sauce of choice
1/4 cup vegan blue cheese, optional, but incredible
2 burger buns, toasted

Place the mushrooms cavity side up in an 8-inch square baking pan. Pour 1 tablespoon wine and 1/2 teaspoon worcestershire sauce into each cavity. Add a good amount of black pepper. Let marinate 1/2 hour to 1 hour.

Be sure your grill is well-oiled. Grill over medium heat 5 to 10 minutes, until done. Turn them over once, after most of of the marinating liquid has cooked into them. Baste as needed with the sauce. Place on the bun and sprinkle with the blue cheese. If you don't like or have vegan blue cheese, a light coating of mayo is terrific on the bun.

Yum! I've had that brand of soy cheese, but I hadn't seen blue. I'll have to keep an eye out for it. I can't believe I haven't made the incrediburgers yet. I'll have to try them this week. I need a good burger.

I've been working on burgers lately- that's a great combo, although I find that brand of blue cheese too mild to be a good imitation... but there really isn't a whole lot of alternatives out there (sigh)!

What kind of buns do you use? I end up eating everything on Ezekial bread (I am a new vegan) because I am scared there will be something bad in the buns!

Kim, homemade are best, but in a pinch I use Rudy's whole wheat buns. Congratulations on going vegan!
