
The very first recipe I made out of 500 Vegan Recipes was a hit with us. When the book first came out, we tried the Potat0-Stuffed Portobellos. They were easy and delicious. That recipe really set the tone for the rest of the book. If you like to eat wonderful food, but not work at it too much, this cookbook is for you.
With 19 (!) recipe chapters, the book has loads of diversity. It’s got Mexican, Ethiopian, Asian, American, Indian, you name it. The salad dressings are some of my favorites. The Basic Favorite Dressing has become just that. The No-Fail Buttermilk pancakes will remind you of the ones your mom used to make. The Creamy Tomato Soup is the best hot tomato soup I’ve ever had. All the baking recipes are creative and make me want to bake a lot more than I should.
With Celine being known for her tremendous baking skills (among other things) and Joni’s ability to make simple ingredients shine, this book has much to offer. If you don’t have a copy yet, order it through the Amazon page at Vegan.com to get more bang for your vegan buck.

I got this cookbook as a gift and it’s awesome.
