Jim makes 3 things really well. His specialties are a club sub (made with field roast), mac and cheese and “macho nachos”. These are serious comfort foods in our house and I love that he makes them. But for the Men Who Cook Challenge, he decided to go all out. In order to keep quiet in the kitchen (and keep my hands busy), I took as many photos as I could of his work-in-progress. It’s really kind of a funny feeling to watch someone else turn the kitchen into a disaster area, but I’m convinced if I’d jumped in, this dish wouldn’t have been as terrific as it was.
In Jim’s words, his dinner creation is “Smoked Mexican Tofu with Tomato Stuff and Grilled Apple and Jalapeno Relish Chutney Topping.” Yes, he likes long names. One of the songs he wrote years ago was called “All My Friends Hate it When I Write Songs When the Title is Too Long.” Enough with the jabber, on to the photos! Here’s the step-by-step process.
This dinner was incredible! His chutney relish stuff was the perfect sidekick for the smoked tofu and smokey tomato sauce. Jim had so much fun doing it that he offered to cook me dinner once a week! I gave him a little break after this one, but I think I’m going to hold him to it.

Kim, I’m thanking you! Jim is feeling so much more adventurous in the kitchen after this…. and he’s always offering to cook if I’m not motivated. This event was such an awesome idea.
