Deconstructed Bahn Mi Salad

This is a tester recipe for Robin Robertson and it just blew me away. It’s got great crunch that plays off the seitan beautifully, and all with that Asian flavor profile that I love. This one is going to be in an upcoming book, but be sure to check back here on Friday for a chance to win Robin’s latest book, Party Vegan!

    Yummm, I love banh mi! I usually make mine with tofu, but yours looks super-delicious too. I might have to try it out… :)
