On our most recent trip to Vermont, we got to try “Mint” restaurant in Waitsfield. A couple of weeks after our trip in 2009, this place opened in the space previously occupied by Spotted Cow, another vegetarian restaurant. Our timing never allowed us to visit the Spotted Cow, but this year we planned our trip to this part of Vermont around the Mint hours. The restaurant was a wonderful surprise!
Waitsfield is a lovely town, even on the dreary day we visited. We started our lunch with a pot of the house tea. The owners previously owned a restaurant in California before moving to Vermont and starting a tea room and eventually Mint. So you know they’ve got great tea!

We started with the hummus, which came with house made pita bread!
I’m not a big fan of pumpkin, but I had to try the creamy pumpkin soup. It was delicious!
These are the Tostaditas, and I could eat them every day for a month and not tire of them. The fresh salsa was fantastic and the beans were seasoned perfectly, all on top of house made crispy corn tortillas.
Jim had the Tempeh and Salsa Bowl, which was even better than it looked. Again, fantastic seasoning and the tofu sauce on the brown rice was both elegant and flavorful.

For dessert, we split the chocolate tart. It came with a wonderful caramel sauce.
Just for the record, the restaurant also serves vegetarian cuisine, but I’d venture to say that the vegan cuisine is what really shines. Our meal certainly did. all the food looks good… but i noticed you disclaimed that you are not the biggest fan of pumpkin. i just love to see it cause i think more vegans are coming out of the pumpkin closet.
We really wanted to try out Mint the last time we were in Vermont, but our timing was off. We definitely have to try it out next time!
