Canned:
- Jalapeno Bread and Butter Pickles – sub: store-bought pickled jalapenos
- Dill Pickles (Not sure which recipe)
- Mexican Tomatoes (Complete Book of Home Preserving -leftover from canning) sub: canned diced tomatoes with chipotles or adobos, with added chili powder
This was a quick and easy dinner, that actually got it’s start the night before. We had some meat-eating friends for dinner and served a Make-Your-Own Taco dinner. The “meat” base was a package of Match ground beef and a package of Upton’s Chorizo.
To turn it into sandwiches, I added more tomatoes, onions, peppers and upped the seasonings a bit. Oh, and the dill pickles? That was a secret of Mom’s when she used to make huge pots of sloppy joes to feed the soccer team. The pickles bring an added zing, and it only takes a couple tablespoons of minced dills to take this to a whole new level. Toasted buns are the only way to go.
These were a hit!
